Low Fat Tuna Salad

What You’ll Need:

  • 2 can(s) (5 ounces each) chunk light tuna in water, drained
  • 2 medium stalks celery, chopped
  • ½ small onion, chopped
  • ½ medium red pepper, chopped
  • ¼ cup nonfat plain yogurt
  • ¼ cup sliced black olives
  • 1 tablespoon(s) fresh lemon juice
  • Pepper

 Directions:

  1. In medium bowl, combine tuna, celery, onion, red pepper, olive, yogurt, lemon juice, and ¼ teaspoon freshly ground black pepper.
  2. Serve atop spinach or whole grain bread.
  3. Enjoy!

Makes about 2 ½ cups.
